A Week of Dinners for only $100

Celebrity chef, Michael Thomas, says you can make 7 easy dinners out of 1 bag of groceries, and have a good time doing it. Sounds impossible right? It’s not. The key to creating good easy meals is to ENJOY IT and HAVE FUN in the kitchen. It might sound ridiculous, but it’s easy. Here are a few tips:

• Don’t get overwhelmed, pace yourself and take it step by step.
• Write down your grocery list and don’t get sidetracked in the store. Stay focused and you’ll fly through.
• Put a little CD player in the kitchen and play your favorite music, boogie through the cooking. Don’t be afraid to dance around a little bit.
• Get the family involved, chopping and stacking, they’ll fuss a bit at first, but then it’ll be a fun thing to do together, and who knows, they might discover that they enjoy it and there might even be a chef in the family.
• Make your kitchen a fun place to be. Decorate with nice dishtowels, good lighting, some cool art, flowers or anything that makes you feel good.
• Rinse dishes as you go along and there’ll be a lot less to clean at the end.

THE GROCERY LIST
3 lbs Ground lean Beef
3 lbs Chicken boneless breasts or thighs
1 bag shredded cheddar/jack cheese
1 bag shredded mozzarella cheese
4 - 14 oz. cans tomato sauce
2 - 14 oz. cans diced tomatoes
2 - 14 oz. cans Enchilada sauce
1 dozen corn Tortillas
1 box Taco shells
I bottle BBQ Sauce
2 prepared (Boboli) pizza crusts
3 white onions
1 red onion
1 clove garlic
1 bag white rice or instant rice
I bag spaghetti
2 bags Salad Mix
1 bag frozen vegetables
1 pack instant beef gravy of jar of gravy
1 box Oven Ready Lasagna
1 bag Frozen Stir fry vegetables
1 box gallon freezer bags

The Basic 3
Total time – 1 hour

Ground Beef Mixture
3 lbs ground beef
1 onion, chopped
3 cloves garlic, chopped
salt & pepper

Brown ground beef in skillet. Add chopped onions and garlic, sprinkle with salt and pepper. Finish cooking. Drain, spread onto aluminum foil lined cookie sheet and cover with plastic wrap. Cool in refrigerator for 20 minutes. Separate into 4 zip- close freezer bags. Roll bag over itself up to the seal and squeeze out air. Seal the bag and refrigerate or freeze for later use.

Chopped Chicken Mixture
3 lbs boneless, skinless chicken breasts or thighs
1 onion chopped
3 cloves garlic, chopped
olive oil
salt & pepper

Chop chicken into 1/4” pieces. Add oil to warming sauté pan. Cook chicken, stirring occasionally, until starting to turn white. Mix in onions, garlic, salt and pepper and finish cooking. Drain, spread onto aluminum foil lined cookie sheet and cover with plastic wrap. Cool in refrigerator for 20 minutes. Separate into 4 zip- close freezer bags. Roll bag over itself up to the seal and squeeze out air. Seal the bag and refrigerate or freeze for later use.

Tomato Sauce
4 cans tomato sauce
2 cans crushed tomatoes
4 Tablespoons olive oil
1 bay leaf

Mix ingredients and simmer 20 minutes. Cover, cool, and save in refrigerator in 1 large container or several smaller containers.

MEALS
When preparing these meals, Don’t get too hung up on exact amounts of ingredients (except spices). If you like a little more meat or cheese or sauce, add them. Don’t be afraid to experiment a little. It’s your dinner.

Tacos with lettuce and tomato
1 pack ground beef or chicken mixture
½ cup tomato sauce
1 teaspoon chili powder
½ teaspoon cumin
taco shells
chopped lettuce
chopped tomato
shredded cheddar/jack cheese

Heat beef or chicken mixture with tomato sauce and spices until simmering.
Heat taco shells in oven.
Scoop meat mixture into taco shells, top with lettuce, tomato, cheese and favorite salsa.

Spaghetti Bolognaise with salad
Beef mixture
4 cups Tomato sauce
1 teaspoon Italian herbs – ½ tsp oregano, ½ tsp basil
Spaghetti

Cook pasta in well-salted boiling water until done 10-12 minutes. Mix together beef mixture, tomato sauce and herbs. Heat until simmering. Pour sauce over pasta and serve with green salad and bread.

Chicken and Vegetable Stir Fry with rice
Chicken mix
Bottled stir fry sauce
Rice
Mixed stir fry vegetables (frozen or fresh) – broccoli, carrots, celery, mushrooms, onions, water chestnuts

Cook rice. Cook vegetables in wok or sauté pan. Add chicken mix and sauce. Heat to simmer. Serve over rice.

Chicken Enchiladas with chopped lettuce and tomato
Chicken or beef mixture
½ cup Tomato sauce
Canned enchilada sauce, red with beef or green with chicken
Corn tortillas
Shredded cheddar/jack cheese
Chopped lettuce
Chopped tomato
Chopped onion

Heat meat mixture in microwave. Mix enchilada sauce and tomato sauce. Ladle sauce into 9”x9” pan. Place layer of tortillas. Sprinkle on some meat mixture, cheese and onions. Ladle on sauce. Repeat layer. Add layer of tortillas, sauce and cover with cheese. Bake. Take out of oven and let set 10 minutes. Cut into squares and serve sprinkled with chopped lettuce and tomato.

Spinach Lasagna with salad
Beef mixture
1 pint Ricotta or small curd cottage cheese
Oven-ready lasagna pasta
Shredded mozzarella cheese
Spinach - Fresh or thawed frozen
Tomato sauce
1 teaspoon Italian herbs – ½ tsp oregano, ½ tsp basil
Parmesan cheese

Mix beef, spinach, tomato sauce, herbs and ricotta/cottage cheese together. Spoon mixture into the bottom of a 9”x9” pan, cover with lasagna pasta. Repeat layers twice. Cover top layer with sauce, mozzarella cheese and sprinkled parmesan cheese. Bake. Cut into squares and serve with bread and green salad.

Barbequed Chicken Pizza with salad
Chicken mixture
Shredded mozzarella cheese
¼ cup Tomato sauce
Barbeque sauce
Chopped red onion
Cilantro fresh or dried
2 Prepared pizza crusts (Boboli)

Mix tomato and barbeque sauces – ladle onto crust. Top with cheese, chicken and onion. Sprinkle on cilantro. Bake and serve with salad.

Shepherd’s Pie
Beef mixture
¼ cup Tomato sauce
Jar or instant packet of beef gravy
2 cups thawed frozen mixed vegetables
Instant mashed potatoes

Prepare potatoes according to box recipe, set aside. Mix all other ingredients and pour into 9”x9” pan. Scoop potatoes on top and smooth out to cover mixture. Bake until potatoes just brown and mixture hot. Scoop out and serve.

great recipes, some of the ingredients arent on the list and the lasagna recipe doesnt say how much tomato sause and they dont say what temp or how long, could i get those answers? thanks pam

For those of you who were confused..."oven ready" lasagne is simply lasagne noodles that don't have to be boiled. I was scared to try them at first, but they work okay. They're a GREAT time-saver; but, for a more authentic looking and tasting lasagne, if you have the time, use boil lasagne.

I am lucky, we have 99 cent and dollar stores here. The 99 cent stores have veggies (I won't buy a bag of potatoes, onions, or tomatoes anywhere else!) Hey I was supried that they got all that for 100$! I need a 100$ for only one meal! So thanks to you for puting that show out because now i dont need to spend the money on one meal. Thank you Tyra!

I made the commitment to get in the kitchen for two hours, I brought in the radio and a small fan. In addition to making the meat and the chicken, I went ahead and also made the enchiladas and lasagna. I also put the meat in with the sauces and the appropriate spices and labeled them, "Spaghetti," "taco meat" and it really took only two hours. Awesome!! Thank you.

My 18 year old son and I watched this show together the other day. He's moving into an apartment in another city next week. First thing he said was, Mom, get those recipes! He likes to cook but between working and going to school, won't have much time. Thanks for the segment and recipe ideas.

A lot of those recipes sound delicious! I have to cook for 6 people every day. I've managed to cut our dinner grocery bill down to $40-50/week by simply cutting back on our meat purchases. It really helps when you have 4 kids to feed!

Wow is all I can say Tyra...I love the Dinner for a week. I am going on a two week visit to see my daughter and hubby is staying behind (he couldnt get vacation at this time) so I was worried what he would eat while I was gone (he don't even know how to boil water without burning it)This show came at the perfect time now I will fix these and put in the freezer minus the salad and he can just use the microwave which he does do that quite well... I love your show! My fiance gets tired of me because everyday I tell him that this is my time that is alotted just for your show! I am 18 and have a 4 month old son and just started my own business with FourPointMoms (come visit me www.foryourneeds.fourpointmoms.com) so I barely have enough time to take a shower every day (but I manage so I don't stink!) let alone make a good enough dinner for my future husband who works 3-11:30pm and likes to eat a little something when he gets home. I just LOVE you! I wanted to say I enjoyed today's show. I really liked those tips about clutter prevention. I do ok-I can get a bit carried away with books, magazines etc. I am trying to remember those tips now--> 6mos toss! etc.. I liked the food part too. My husband is a funny eater--born and raised in the south--it's MEAT for him and most of the time fried. He will eat it cooked other ways too but you gotta have meat!! I am gonna try these, probably more than for 2 but then you will have leftovers for lunch next day or freeze that and one nite have a you pick yours and I'll pick mine.. It'll work.. AND great day at the copying issues on this board--PPL just highlight the stuff you want--and it'll do it, it did mine, then copy-->paste it into a blank open Word document and then SAVE!! Woo Hoo.. So Easy!! Then I kept on my little whatchacallit--portable little thingy you save stuff to and keep!! (zip drive??) Heck, I dont know~~ Every1=Have a Blessed, Fun and Safe Independence Day!!!!

Another way to get rid of garlic/onion smell from your hands is to use a stainless steel spoon or other stainless utensil. Under running water rub it on your hands like a bar of soap.

HOW MANY PEOPLE IS THE SHOPPING LIST FOR?
(I have just myself & a teenage son -- will he eat as much as the family of 5 on the show?!)

How many servings of each meal does this make?

HOW LONG WILL THE COOKED SAUCE, CHICKEN & BEEF LAST IN THE FRIDGE? How does this method impact the 'shelf life' of leftovers?

Lastly, what is oven ready lasagna?!

All you have to do is is highlight the text, go to "edit" on the tool bar and click on "copy." Open a blank word processing document, to back to "edit" and click on "paste". It takes two seconds!

I am real disappointed. I spent 20 minutes trying to copy and print out all the receipies. All this site lets me do is to copy the intro and the first item on the list. The remainder can not be copied or printed out by 'selection' I don't need everything else. Also that way, the words on the right are cut off and I don't get all the instructions anyway. Please, Please make it printer friendly!

My husband and I just bought our first house. We've been together for over 6 years and married for 2. I love to cook but don't have the time, most of my recipes call for at least 2 hours total. I go to college full time and he works 12-14 hour shifts. Today's show really showed me a new way to help with our soon to be "tight budget." Question...what temperature and how long do you bake things for?

Tyra, I enjoyed the show. I just had a comment about you (your guest) throwing away all the stuff that could have been donated to either a homeless shelter, women/children's shelter, or even to an organization (that is worldwide) called FREECYCLE. You can find information about them at www.freecycle.org. It keeps all useful items out of our landfills. There are members all over the United States. We have 5 kids ages 8-17 and this summer has become the summer of learning to cook. Each child has one dinner night. They are really starting to get into it! I just want to say that I used to want to be one of those unorganized becuz they just had any and everything needed. I have tried but I just couldn't do it, its just too messy for me and I'm almost like the monk when it comes to things. However, I do love bodywashes,lotions and books but i tend to think about what I'm doing be4 it gets out of control. I am thankful for the tips of what to do to organize your stuff and very thanful for the dinner ideas cuz now that mt husband and I have a baby I dont have the energy or the desire to want to cook so everything is mostly frozen dinners, but ima give the recipes a try.

hi Tyra.., I love the idea of saving time in the kitchen. I work graveyard and when I come home in the morning my husband is off to work, and I have to stay up all day with our 3 yr old girl, waiting for him to come home before I can go to sleep, then when he comes home he's so exhausted that he dont feel like cooking either, and takeout here we come!!. it's nice to know that we can make meals that wont push us over the edge...well..he can make meals...I'm still going to bed! haha..Thanks!=]

Hey Tyra, thanks for this-its a great idea! It's so ironic because I was just wondering how I could be able to make dinner for my family and not keep going to the store every night. I'm 20 years old, going to college full-time, have a job, and a 6 month old baby boi so this is great-r u goin to keep doin it??? :P k-peace.

Tyra I just want to let you know that this is the best kept secret yet. I have 3 sons and I have gone back to college full time. So I have very little time. This help the boys get a full course meal and not McDonald's double cheese burgers everyday.

Love this!!! Please let me know if you are going to do anymore of these cooking shows. The idea of not having to stop at the grocery store everyday and knowing what your having for dinner ahead of time is the best.

I was shocked to hear Margaret Cho's comments on your show. As she denounces racism she in the same breath says "white people don't have a clue". I am half Asian myself and have dealt with my fair share of racism but is not making blanket statements about white people also racism?

Hi tyra, my mom cooked ground beef turkey she cut up some onions and put it in the meat. She smelled her hands and it stunk cutting up those onions. We watched your show the other day on how to keep your hands minty fresh. My mom put toothpaste in her hands and washed them. She smelled her hands it was minty fresh. your technique works.

For all the vegetarians - you can easily subsitute veggie ground or tofu for the beef and chicken - there are some excellent meat alternatives out there now! The tofu I'd do the night of making the dinner, but the veggie ground can be used straight from frozen!

i just got to watch this show. i had it recorded. and i'm glad i did. one my husband is clutter freak and it's hard to get him to get rid of things. (still hasn't). and the meals!! i'm always looking for new things. i have 4 kids, ages from 1 year to 14yrs. it's hard making something they will all eat. and it's hard to find time to cook a nice meal. thanks so much!!

these ideas are great its a great plan for someone who doesnt have time to cook. But my husband thinks pasta is made for woman only and nothing will keep him full but meat. he berly eats his salads but i will try to see if he likes this food thanks

How do we know what temperature to bake some of these meals at and for how long should they bake??

I've been doing this for years in a way. But I do it a bit differently. When I'm cooking a meal of baked or rotisserie chicken, I just make lots extra and remove the skin and bones. Then I have plenty left over for chicken salad, chicken tetrazzini, etc. Same concept, but I start with a planned meal that leaves me with cooked chicken that doesn't have added oil or fat! Andddd, watch for those yellow marked down packages of meat in the grocery if you are going to cook soon. I save tons that way and then can use something better than ground beef sometimes! This is exactly the thing any busy working mom is looking for. I LOVE the idea of making 7 meals from 2 bases that is wonderful and inspires me to get away from the boxed meals as well. Cooking is too much like a chore! Michael should do an entire cookbook set up in this fashion!

I have been cooking ground beef ahead for use during the week but these meal/recipes take the concept one step further! I love the one stop shopping list and easy recipes all on one page. Now, when my kids ask the dreaded question, "What's for dinner?" I can answer with something other than "Frog Soup!" because now I really know what we're having and it even sounds good enough to eat! love this idea of two meats and seven different meals. this is great for me as i live alone and this will definitely make life easier for me and healthier, too. the organization segment also put me in the mood to get one room decluttered. i learned from my A.A. sponsor that as i am cleaning my house, i am also cleaning out my mind. i always feel more at peace with the world and myself after i get my house so that it is neat and serene.i just need to do it more often

Wow! I'm so glad I watched the show today. I have a family of six, And tring to cook meals from scratch every night is tiring. So some nights it's every man for himself (what ever they find they can eat.)This is a great idea. A weeks worth of dinners. I will definetly be printing and cooking these meals. These recipes are great! I am a working, single mom too and my son will enjoy eating these easy, delicious and healthy meals.
I go home everyday for lunch so that I can watch Tyra's show. Along with treating people so kindly, she is very motivating and helpful in all facets of life.

I'm a college student and always looking for a good meal that isn't take-out or box. It's such a hassle going through the cookbook to find meals. This is wonderful to have everything planned out! Great thing for a college student or someone with not much time.

Let me be the first to say, this concept is fantastic, but make sure you take a good look at the recipes. The grocery list has fallen short. Several things from the recipes do not appear on the list.

Loved the show today. This is something that I really need recipes that are inexpensive that save time; I am recently engaged with a man who has a big appetite, have a full time job at an elementary school, and in college. I especially loved the variety of the recipes.

I love this I idea, but I have a problem. What do I do when my husband is a seriously a picky eater? He will only eat beef, elk, or dear meat. He hates basicaly every fruit known to man and will eat very few veggies. I need suggestions.

Trya you are soooo on time with this!!!! Seriously I was about to find a cooking class for my husband but I was going to present it as a "fun" couples thing...still a plan.
I'm 32, married 7 years with a 1 year old and I'm the only one in the house who cooks. I want to have home-cooked meals every night but its strenuous. I refuse to give the baby fast food so she always eats better than everybody in the house. This 7 meal recipe is a Godsend. I'm going to try it. Thanks for your help!!!

Dear Tyra you wanted to know some home remudies.Will if you cut "onions" We no everyone doesn't like to do that.Well after you are done cutting onions wash your hands with salt and the onion smell is gone it really works I use it all the time.Put a little like dime size in your hand and just wash them like normal.Try it out

Thank you for this! I'm disabled from brain tumors, and sometimes can't always be able to cook a good homecooked meal. This will be perfect for my wonderful family! I can tweak it for our low carb that we are following now (and it's working!).

Oh my goodness, I love all those foods anyway and I never thought to pre-prepare the meats. It usually takes me a hour and a half to cook each meal each week. This is going to be great because now I'm not home much in the evenings and my husband can follow simple directions. Thanks so much for the tip. Going shopping today to pick up the items that I don't already have and I'll follow up to let you know what my husband and kids think.
